Description

Baked oatmeal is a great make-ahead breakfast for busy mornings. Enjoy plain or topped with your favorite yogurt, nuts or fresh fruit!

Ingredients

2 c
Rolled Oats
1 t
baking powder
1⁄4 t
salt
1 t
cinnamon
1⁄4 t
nutmeg, ginger or pumpkin pie spice
1  
egg
1  
banana (mashed)
1 c
pumpkin
1 c
milk
1 t
vanilla
1⁄4 c
Raisins (optional)

Instructions

  1. Preheat oven to 375˚. Spray an 8x8 baking pan with non-stick cooking spray.
  2. Combine the oats, baking powder, salt, and spices.
  3. In a separate bowl, combine the egg, banana, pumpkin, milk and vanilla. Add the raisins if using.
  4. Pour the wet ingredients into the dry. Mix well.
  5. Pour into prepared baking pan.
  6. Bake for 30 minutes until the center is set.
  7. Allow to cool slightly and cut into 4-6 portions.
