This salad is full of delicious surprises. It is light, yet exceptionally savory.
4 cCubed watermelon (seedless)
1English cucumber (halved lengthwise and sliced)
1 cCrumbled feta cheese
1⁄8 cFresh mint (minced)
1⁄8 cBalsamic vinegar (Add more or less to taste)
1⁄8 cOlive oil
1⁄2 tSalt and pepper
- Slice watermelon and English cucumber
- Chop the green onions
- Mince fresh mint
- Combine all ingredients in a large bowl and toss to mix.
- Serve and savor.
