Send your kids off to school with an easy, make-ahead breakfast! Oatmeal and fruit are rich in fiber to keep them full and energized.
2 cPlain old fashioned oats
1 cAlmond Milk
1 1⁄2Medium ripe bananas (mashed)
1Large apple (peeled, corded, and diced)
1 tGround cinnamon
1⁄4 cWalnuts (optional)
- Preheat oven to 375 F.
- In a large bowl, combine the oats, baking powder, and cinnamon.
- Add the almond milk, egg, and mashed banana until mixture is combined.
- Stir in the diced apple.
- Grease a muffin tin and fill each cup with oat mixture to just the top. Bake in oven at 375 degrees F for 20-25 minutes. Store in refrigerator or freeze for later use. Enjoy!
