Description

Send your kids off to school with an easy, make-ahead breakfast! Oatmeal and fruit are rich in fiber to keep them full and energized.  

Ingredients

2 c
Plain old fashioned oats
1 c
Almond Milk
1  
egg
1 1⁄2  
Medium ripe bananas (mashed)
1  
Large apple (peeled, corded, and diced)
1 t
Ground cinnamon
1⁄4 c
Walnuts (optional)

Instructions

  1. Preheat oven to 375 F.
  2. In a large bowl, combine the oats, baking powder, and cinnamon.
  3. Add the almond milk, egg, and mashed banana until mixture is combined.
  4. Stir in the diced apple.
  5. Grease a muffin tin and fill each cup with oat mixture to just the top. Bake in oven at 375 degrees F for 20-25 minutes. Store in refrigerator or freeze for later use. Enjoy!
